Sweet and Spicy Vegetarian Curry

Try this delicious recipe....
2 tablespoons vegetable oil
1 large onion, roughly chopped
1 tablespoon curry powder
1 teaspoon ground coriander
1 teaspoon ground turmeric
130 g ( 5 oz ) button mushrooms, roughly chopped
1 red pepper, deseeded and roughly chopped
1 green pepper, deseeded and roughly chopped
2 courgettes, roughly chopped
½ bottle of Top Down Heinz Tomato Ketchup
(300g )400ml ( 12 fl oz ) vegetable stock
freshly ground black pepper

Heat oil in a large frying pan add onion with the spices and cook until onion is softened - this takes about 10 minutes. Add mushrooms, peppers and courgettes and cook for a further 2 minutes. Stir in Heinz Tomato Ketchup and vegetable stock and simmer uncovered for 15 minutes. Season with black pepper and serve.
